Roasted Cornbread Custard
After launching his new restaurant group Kilgore Culinary Group in August, Miami chef Brad Kilgore has followed through on his plans to expand with two concepts in the same location, one on top of the other. Kaido debuted in December, and now its sister Ember is open downstairs. Ember is an American bistro with a focus on wood-fired dishes, smoked meats, pastas and shareable sides.
One of the specialties cooked over fire is a roasted cornbread custard topped with beef ragout and an herb salad composed of chives, chervil, parsley, pea shoots and frisée. It’s served with a side of bone marrow butter. The toppings and accompaniments for the cornbread custard will change seasonally.
